Finding something quick and easy to make for hungry children can be a bit of a challenge. I usually make lunch for our girls before I pick them up from school, but sometimes I don’t have time. Here are some quick and easy lunch ideas for you to try.
Sandwiches
From a simple ham and cheese sandwich to something a bit more exciting, sandwiches are quick and easy. You can get sandwich fillers from supermarkets or try a number of different combinations. Some of our favourites are ham, cheese, ham and cheese, cheese and tomato.
Toasties
Much like a sandwich a toastie is just as quick. They’re great for a cold day to give your child something warm to eat. Some of our favourite things to put inside toasties are: beans, cheese, ham, ham and cheese, beans and cheese, cheese and tomato.
Wraps
I love the simplicity a wrap. You can keep it pretty basic or use them as a chance to sneak some veg in too! We love chicken and veg wraps, cheese, tomato and ham wraps, tuna and salad etc.
Fun Lunch
One of my favourite types of lunches to make are fun lunches or a ‘picky bits’ lunch as my mum used to call it! This type of lunch is great for using up leftovers as it literally is a selection of anything and everything. When I make a fun lunch I usually include some small sandwiches cut into fun shapes, cocktail sausages, cubes of cheese, cucumber, grapes, carrot batons etc. As a real treat we’ll have an indoor picnic in our front room!
Beans on toast
Nothing says simple lunch to me better than the humble beans on toast! Use brown bread for an extra added health bonus. Sometimes we even throw sausages in too! What kid doesn’t like beans on toast?!
Sausage roll and beans
A filling meal that’s quick and easy. Simply pop a sausage roll in a pre-heated over for 5-10 minutes until warm throughout and serve with beans. My girls like their beans served in a ramekin!
Pizza
If you have enough time you can have lots of fun making your own pizza, but if not, don’t worry! Whether it’s a frozen pizza or chilled in the fridge, they make great lunches and can be served with a handful of fresh or frozen veg.
Pasta
Cheesy pasta is another favourite dish of my girls and again, it’s quick and easy. Just cook some pasta in a pan and then I use a cheese sauce from a packet so all I need to do is add milk, then microwave for four minutes and pour over the pasta. As an added twist, I like to add some ham, broccoli or sweetcorn too.
Soup
Again, another simple lunch that can be nutritious, but be sure check the salt levels as some soups have a lot of salt. I like to make my own soup because I know exactly what’s in them then. Add some bread to dip and away you go! Perfect for a chilly day!
Pitta Bread
This is something that I like to eat as you can cram so much into pitta breads and hide lots of veggies too! You can use the same fillings as sandwiches and wraps to make a healthy, tasty lunchtime meal.
