A Taste of Cardiff

I love home cooking and I love trying new recipes.
Sadly, I don’t get much time to cook as much as I’d like to. This means my husband and I will often pop some chicken in the oven fresh from the Freezer along with some chips or on other occasions a ready meal.
Before we had children, we used to eat a lot of freshly cooked food. Chicken curry, tagine and homemade vegetable soup, but with toddler twins it’s become a bit difficult to find the time to cook.
However when Joes Bloggers asked me if I’d like to try and cook baked rump of welsh lamb, sautéed potatoes, curly kale, Kasundi Sauce and a mint yoghurt dressing – I couldn’t resist!

They very kindly send me all of the ingredients I needed to cook this wonderful meal. You can find the recipe here.
I don’t eat lamb very often because I tend to just buy chicken as I know the whole family likes it, but I do like lamb.
I decided to cook this meal for just my husband and I as I’m not really sure our twins would have enjoyed. It’s a bit on the spicy side and it’s very rich tasting.
This isn’t a family friendly meal as it takes a lot of preparation and with the time it takes to cook as well it took me close to three hours! It was well worth it though!
I’d never heard of Kasundi sauce before and if you haven’t either it’s quite spicy and full of tomatoes, spices and a kick of chilli! You’ll need to simmer it for two hours.

The mint yoghurt dressing was easy to make and tasted lovely.

I found that the combination of the hot, spicy Kasundi sauce with the cool mint dressing worked really well.


The sautéed potatoes were delicious and added a nice crispness to the meal.


I’d never tasted curly kale before and I have to say that I loved it! It was easy to cook just by blanching it in boiling hot water and frying it with some butter. It was so tasty!
When it came to cooking the lamb I did this in an oven proof frying pan – I didn’t even know you could cook lamb like this, but it was very succulent, tasty and tender so I would definitely cook it like this again.
This meal was very tasty and if I was having a romantic night in with my husband I would definitely cook it again!
