The Perfect Winter Treat

For the past few months in the run up to winter, I had heard a lot of people talking about slow cookers. 

I know they’re used commonly in countries such as India, but I didn’t have a clue what a slow cooker was!
After looking online and finding out what they were, I went out and bought myself one and I haven’t looked back since. The thing I love the most about using a slow cooker is that you can prepare most of your dish the night before and then in the morning simply add all of your ingredients together and leave the rest up to the slow cooker.
Best of all?
Coming home in the cold and rain after work to a delicious home cooked meal.
This is my favourite perfect winter treat.
Lemon Chicken Tagine
Ingredients
4 boneless chicken thighs
1 clove of garlic
4 carrots
New potatoes
1 onion
Ginger
Turmeric
2 chicken stock cubes
Olives
1 Lemon
Method
·         Peel and cut carrots and potatoes into cubes or slices
·         Peel and chop up onion
·         Peel the garlic clove and crush
·         Add the carrots, potatoes, onion and garlic to the slow cooker

·         Cut the lemon in half and juice one half. With the remaining half of the lemon, cut into 4 thin slices
·         Fry the chicken in the lemon juice and some olive oil for about 5 minutes on both sides until lightly browned. Add a teaspoon of Turmeric and Ginger

·         Once fried place the chicken on top of the vegetables in the slow cooker
·         Make your chicken stock and then add the remaining juices from your frying to the stock and stir
·         Pour the stock over your chicken and vegetables in the slow cooker
·         Add one slice of lemon to the top of each chicken thigh and then add the olives

·         Set your slow cooker to low and cook for 5-6 hours
·         Enjoy!
