Recipe: Tasty Slow Cooker Chicken Casserole
I love my slow cooker. It makes cooking a family meal so much easier. You can just prep your ingredients and throw them into the slow cooker in the morning then leave it cook for the rest of the day.
One of my go to slow cooker recipes is chicken casserole. However, although nutritious, it can be a bit bland. That’s why last week I decided to do some experimenting to make it more flavoursome and I thought I’d share my new tasty slow cooker chicken casserole recipe with you!
You will need:
- 500g diced chicken
- 2 chicken stock cubes
- Plain flour
- Potatoes
- 1 Onion
- Carrots
- Parsnips
- Any other vegetables you want (I added some leeks in too)
- Bistro gravy granules
Method
Start by coating your chicken in the plain flour then chop your vegetables.
Add the vegetables to the slow cooker followed by the coated chicken. I like to give it a mix before adding the chicken stock cubes.
I use two chicken stock cubes with 300ml of water which I then pour over the vegetables and coated chicken.
Set your slow cooker to low and let it cook for 7 hours. Alternatively, you can set it to high and let it cook for four hours.
About 10 minutes before you’re ready to eat, stir in three healed tablespoons of Bisto gravy granules and leave for 10 minutes before serving.

Side Note
If you have time you may want to brown the chicken before it goes into the slow cooker to help seal in the flavour. To do this, coat the chicken in flour and cook in a frying pan with a knob of butter or some oil for 4-5 minutes.
