Recipe: Peppers stuffed with cous cous, feta and bacon

Since the beginning of the year I have been on a mission to lose weight. So far I’ve lost 10lbs through healthy eating and regular exercise. I thought I would share with you one of my favourite healthy meals. 


Ingredients

2 red peppers
85g Cous Cous
Handful of Cherry tomatoes
2 bacon rashers per person
50g feta cheese
Method

  • Preheat oven to 200C 
  • Cut the top off of the peppers and remove the seeds
  • Microwave the peppers for 5 minutes until soft
  • Grill the bacon
  • Pour the cous cous into a bowl and cover with 125ml of boiling water. Cover and leave to stand for 5 minutes
  • Slice the tomatoes in half and put aside
  • Cut the bacon up into small squares
  • Mix the tomatoes and cheese into the cops cous
  • When your peppers are ready halve them and fill with the cous cous, tomato and cheese mixture
  • Bake for 10 minutes
  • When ready, sprinkle with bacon and enjoy!

For an added twist why not serve with some salad or squeeze half a lemon over them for a zesty flavour!
